The BEST Chili Cheese Cornbread Recipe EVER

This Chili Cheese Cornbread recipe goes so well with my homemade chili (click here for recipe) it will make your taste buds sing and cures the winter blues! It might bring peace in the Middle East and stop the war in Ukraine, too! It’s that good.

Cornbread History

Nothing is more American than cornbread. Corn or Maize was first cultivated in the America’s by Native Americans and was a staple of their diets. Many different Native American peoples served bread or cakes made from corn. Later, European colonists embraced corn in their cuisine as well. Southerners especially embraced cornbread as a staple of their diets.

Some cornbreads are sweet. Ugh. My Texan Great-grandma Mattie was horrified by sweet cornbread. She preferred her cornbread to be more savory than sweet. She passed those preferences on down to me. Since I’m a native Arizonan, I have adapted my cornbread recipe to include masa (corn) flour, instead of the more course cornmeal.

The Ingredients

  • 2 cups of white flour
  • 2 cups of masa flour (or cornmeal if Masa isn’t available)
  • 1 1/3 cup granulated sugar
  • 2 teaspoon salt
  • 7 teaspoons of baking powder
  • 2/3 cups of neutral oil or butter (I use either a mild olive oil or grapeseed oil)
  • 2 large eggs
  • 2 cups of milk (I use my raw goats milk)
  • 1 can of diced green chilis
  • 3/4 cup of Mexican shredded cheese or pepper Jack cheese

Instructions

Mix dry ingredients in a large mixing bowl with a spoon. Add wet ingredients and fold over just until the batter comes together. Pour batter into an oiled cast iron skillet for the best results! You can use a greased 9″ x 13″ glass baking pan, but cast iron takes this cornbread recipe to another level! Bake at 400 degrees for 20-25 minutes.

Check doneness with a toothpick or butter knife in the middle to make sure it’s fully cooked before removing from oven. (Toothpick or knife will come out cleanly with no residue if bread is fully done).

    You could add frozen or canned corn to your cornbread recipe.
